The $100 is a deposit to reserve one of our Red Wattle or Large Black Hogs. We are raising a limited number of hogs and expect them to sell fast.
Our hogs are busy growing to the ideal butchering weight. The hog's "hanging weight" at $5.00 per pound determines the full price of your hog. Our price does not include butchering fees. Typically, our half hogs have a hanging weight of 100 to 115 pounds. When the time comes to butcher your hog, we will deliver the hog to the fine folks at Smithville Food Lockers and let you work with them to iron out the butchering details. All of our pork products come from hogs that are humanely treated, pasture raised, hormone free, and antibiotic free.
We source our pork products from our team of Red Wattle and Large Black Hogs. Originally from England, the Large Black heritage breed of hog has a flavor that hearkens back to the old days when pork was the king of meats. Micro-marbling, short muscle fibers, and excellent bellies produce the most exquisite bacon and flavorful meat. The red wattle is what Brooklyn's Vinegar House Hill chef Mike Poiarkoff says, “is the porkiest pork you can get, the purest expression of how a pig should taste.”
